EXPLOITATION OF MICROBIAL PECTINOLYTIC ENZYME SPECIFICITY IN PECTIN MANUFACTURING AND OTHER AGRO-INDUSTRIAL PROCESSES. - FS0208

Description
This project is a collaboration between four academic labor atories and two companies aimed at improving and extending the industrial utilization of pectin by understanding, controlling and altering specificities of pectinolytic enzymes. The IFR will analyse the structures of the pectinolytic enzymes and characterise the interactions between the enzymes and their substrates in molecular detail.
Objective
1) To establish the molecular basis for the specificity of various technologically important pectinolytic enzymes (pol ygalacturonases, pectin and pectate lyases and pectin esterases ) and to analyse the pectin fine structure in more detail. 2) To exploit this fundamental knowledge for selecting specific enzymes to improve and innovate pectin manufacturing and to reduce environmental pollution. 3) To exploit these enzymes or defined enzyme cocktails in improving animal feedstuffs and in dedicated (liquefaction, maceration) and traditional (extraxtion, clarification) processes in food-industry.
