Dietary carotenoids in the protection against oxidative damage in humans (formerly AN0516) - AN0444

Objective
Objective 1 To determine the relative potencies for the individual pure carotenoids to protect against oxidative damage by measuring their antioxidant activities in comparison with that of the standard vitamin E analogue, Trolox. Objective 2 To assess to efficacies of carotenoid-containing fruit and vegetables as antioxidants in terms of total antioxidant activities, in relation to their carotenoid contents and the differential contribution from other potential antioxidant constituents. Objective 3 The determine the bioavailability of carotenoids from vegetables and the contribution the increased plasma carotenoid levels make to the antioxidant capacity of LDL.
