HEATOX- heat induced toxicants in food - SD0421

Description
The main purpose of the project is to study the formation, control and detection of heat induced toxicants, with the main focus on acrylamide.
Objective
The overall objectives are:·

Provide a simple, quick, relatively cheap and reliable prototype immunodiagnostic tests for acrylamide·

Develop rapid, inexpensive rapid prototype assays for precursors to acrylamide formation.·

Development of the above assays in to laboratory based systems (e.g. ELISA : 96 well formats) and evolving them into a simple, one step on-site formats.
