1. To review literature on current fish slaughter methods in order to identify methods and to evaluate as far as possible welfare and quality implications of each method.
2. To identify fish welfare and carcass quality implications of various slaughter methods by a series of field trials where reliable information is not available in the literature.
3. To identify the slaughter method most suited for development.
4. To design, develop and test a device able to humanely stun trout beyond the point of recovery in line with currently required standards of fish welfare and carcass quality. The design should be capable of future development into a commercial machine.
5. To transfer the information and technology resulting from this research to the industry.
