`Development of a new method for the accurate measurement of added glaze on frozen foods, particularly shellfish.` - AN0677

Objective
1. To remove the added ice glaze from frozen shellfish at a temperature for which the product will remain frozen. This will be achieved by attempting to dissolve the ice in a solvent at a temperature below 00C forming a solution with a freezing point well below the temperature of measurement. 2. Having dissolved the ice into the solvent to measure the dielectric properties at a known fixed temperature. 3. To relate the dielectric observations to previously acquired calibration data regarding the dielectric properties of polar mixtures and thus determine the water content of the solution. 4. To construct an apparatus that will perform the measurements automatically.
