Simple new monitor for whole food: Shear wave stress and propagation analyser suitable for laboratory or hand held us - AN0647

1.Using theoretical and experimental studies of the phenomena underlying shear wave stress and propagation - to design an experimental system optimal for investigating the characteristics of food, particularly meat and fish. 2.To develop instrumentation and software systems based on the above study. 3.To design, construct and develop sensors for introducing and detecting shear wave stress in solid, whole food materials. 4.To investigate the characteristics of shear wave stress and propagation analysis in:- a)fresh, frozen and aged fish fillets. b)minced fish. c)composites containing minced fish.
