Objective
1.(a)To determine the total antioxidant potential of individual polyphenolic flavonoids commonly found in various foods (fruits, vegs., beverages). (b)To determine these foods' compositions of individual polyphenolic flavonoids, carotenoids and antioxidant vitamins. (c)To determine the total relative antioxidant status of these foods in relation to their compositions of individual polyphenolic flavonoids, carotenoids and antioxidant vitamins. (d)To assess the ability of these foods to inhibit LDL oxidation in vitro and its relationship to their antioxidant compositions and antioxidant activities. 2.To establish the intake of polyphenolic flavonoids from dietary constituents in relation to uptake in vivo; and to establish the effect of flavonoids as antioxidants in vivo by measuring their effects in protecting the low density lipoproteins from oxidation.
