Magnetic resonance imaging to determine micro structures and dynamics of food components. - FT0107

Description
The technique of magnetic resonance imaging allows the internal features of materials such as biological tissue to be revealed non invasivelu. The technology has developed rap[idly in recent years to satisfy medically generated demands. There it has demonstrated its usefulness in determining anatomical structure together with functionality and in doing so has provided a unique diagnostic tool. The pace of progress has been such that there have only been limited feasibility studies and hence limited spin-off for other areas of commerce. The key objective of this proposed research programme is to develop and assess the potential of this new technology for the Food Industry. Reflecting it's history the existing technology is sophisticated and thus a moderate to high investment in equipment and skill would currently be required by a food company in order to exploit the techniques promise. In turn an Instrument company would require reassurance that there would be a substantial market and that the most appropriate applications had been identified before it developed a low cost instrument targeted at food applications. Before either of these investment decisions could be made on any objective basis it is necessary to demonstrate that unequivocal quantitative data can routinely and consistently be obtained by the application of MRI to food systems, and that this data can be expressed in a form usable by the Food Industry.
Objective
1. To develop the methodologies required for the successful application of MRI techniques to food systems and to the solution of generic problems. 2. To extract quantitative NMR data and apply and where appropriate develop models to convert this data into a form usable by Food scientists and Process Engineers.
