Description
R&D Summary Objectives:- Investigate the nature of Scombrotoxin in samples of frozen mackerel and the processing conditions which may exacerbate its presence in fish flesh. Key customer purposes:- Ensure awareness of the possible public health hazard arising from consumption of fish containing scombrotoxin.
Objective
(i) To determine the conditions under which scombrotoxins develop in mackerel. (ii) To determine whether parasitic infection of samples is implicated. (iii) To learn more about the formation, occurrence and nature of the toxins which occur in mackerel. (iv) To examine the element of human idiosyncrasy that is apparent in the response of testers
