Survivial of Listeria monocytogenes in thermised milk - FS1020

To determine the effect of thermisation on milk containing Listeria monocytogenes. Survival and subsequent growth of the organism will be investigated in both liquid milk and cheese.
To determine if thermisation may cause food safety problems because of the survival of Listeria monocytogenes. This information will be used during negotiations on the labelling of cheese made from unpasteurised milk. The UK is pressing for cheese made from thermised milk to be labelled as made from unpasteurised milk because of the potential food safety risk.
