Use of Ultrasound to Control and Monitor the Baking Process (FQS 21 Br) - FT0612

To gain empirical understanding of the interaction of ultrasound with batters, dough and the baked products made from them so that techniques can be developed to improve the quality of cakes and other bakery products using non-contacting on-line inspection.
